2 boneless/skinless chicken breasts
2 large sweet potatoes
2 cups frozen peas
1 jalapeno pepper
1 bunch green onions
4 cloves garlic
1 tbsp curry powder
2 tsp ground turmeric
Light olive oil or canola
1- Wash and cube 2 large sweet potatoes. Roast (on lightly oiled cookie sheet) for 20 min in 425 degree oven.
2- During roasting, sauté chopped green onions, chopped jalapeno, and minced garlic cloves (as many as you dare!) in oil in a large saucepan. After 2 minutes, add cubed chicken, curry powder, and ground turmeric.
3- When chicken is a deliciously golden and slightly browned, add juice of one lime, roasted sweet potatoes, frozen peas. Heat through and salt to taste. Dig in!
